Can this be real? On December 23, 2011, I gave up sweets and desserts. Such desperate times lead to amazing recipes like this. I find no difference in taste. This changes everything.
No Sugar, No Artificial Sugar, Gluten Free Cookie Dough
Makes about 4 cups
1 and a 1/2 cups chickpeas, drained
A dash of salt
A dash of baking soda
1 tablespoon vanilla extract
1/4 cup peanut or almond butter
1 and a 1/4 cup pitted dates
1/2 cup chocolate chips
Place dates in a small bowl and add 1/2 cup water. Let sit for 6-8 hours.
Combine dates, date water, and all other ingredients except for the chocolate chips into a food processor and blend until very smooth. Using peanut butter will give your dough a peanut butter cookie dough taste, if you would prefer it. I recommend almond butter.
Fold in chocolate chips and serve. Consider refrigerating before eating to enhance the cookie dough effect. One important note is this recipe is designed to be like eating raw cookie dough, so they are not meant for baking.
