coconut & mango steak tacos

Hola! Mi nombre es Rachel. Muy caliente. Okay, I’ll stop now. It’s Taco Friday!

 Coconut & Mango Steak Tacos
Makes 6 tacos

6 tortillas
1 and 1/2 pounds flank steak
1 green onion, diced
Mango, diced
Red pepper, diced
Salt and pepper
Arugula
3/4 cup coconut milk
4 cloves garlic, minced
Cilantro
2 tablespoons olive oil

Sprinkle meat with salt and pepper. Marinade chicken in coconut milk, garlic, cilantro, and olive oil overnight. Preheat oven on high broil. Sear steak in a skillet  for 3 minutes on each side. Transfer to baking sheet and broil meat for 5 minutes. Rotate to alternate side and broil for another 5 minutes.

Dice mango, green onion, and red pepper.

Slice steak into thin strips. These cook times prepared the meat to medium well. Assemble with mango mixture and arugula and serve.

Hi Rachel, I love your blog and have tried some of the recipes. Yummy :-)
I tried to contact you via email as not to post this so publicly and came up short. It’s no biggie really however if it were my blog I would want to correct it>>>>>
This particular recipe has an error, you typed chicken in-stead of steak for the marinade step and when I clicked on the link for Caprese Pasta it took me to the Baked Avocado Fries? Like I said not a real BIG deal but a deal just the same.
Keep up the great work..And bring on those recipes! :-)
