It’s healthy. It only uses one pan to make. It’s easy. And its really, really good. Dare I say it – my favorite breakfast.

Healthy Breakfast Stir Fry
Serves 2

2 cups frozen shredded hash browns
1 cup bell pepper, chopped
1/2 onion, chopped
3 carrots, chopped
1/4 cup bacon bits
1 cup baby spinach
1 egg
Olive oil

Drizzle hash browns with olive oil and heat medium heat over medium heat for 10 minutes. Add bacon, onion, and carrots to mixture. After about 3-5 minutes, add peppers. Season with salt & pepper and continue to mix. Allow to cook 3-5 more minutes.

Add baby spinach and continually stir.

Once spinach is wilted, crack egg into pan and fold over ingredients. Cook for 1-2 more minutes and serve.

I noticed you had baked potatoes in your weekly menu. You could bake a couple extra potatoes and chop them to use in this recipe instead of the frozen hash browns.
