simple sesame chicken

Simple Sesame Chicken
Serves 2

1 cup rice
3 tablespoons honey
2 tablespoons sesame seeds
2 tablespoons soy sauce
1 garlic clove, minced
2 egg whites
2 boneless, skinless chicken breasts
1/4 cup flour
4 scallions, diced
1 and 1/2 pounds broccoli
2 tablespoons vegetable oil

Prepare rice according to package instructions. In a large bowl mix together egg whites and flour. Trim chicken breast into 1 inch pieces and coat in flour mixture. Heat 1 tablespoon of oil in skillet on medium-high. Add chicken and cook for about 12-15 minutes.

Meanwhile, in a small bowl combine honey, sesame seeds, soy sauce, and garlic.

De-stem broccoli and boil for 3-5 minutes.

Add sauce and scallions to chicken and saute for 2 more minutes. Serve with broccoli and rice.
