DIJON & BRIE CHICKEN

To me, this recipe represents what I consider the golden age of pinterest. We are all on there, refining our styles and pinning things that look pretty. It’s coinciding with my time as a newlywed and becoming a wife. So this is a bit indulgent (as far as impractical-ness) of a dijon chicken recipe. But I pinned it from martha just because it looked pretty and I consider myself stilling honeymoon-ing, so it seems okay, and even right to try it out.

Dijon & Brie Chicken from Rachel Schultz

DIJON & BRIE CHICKEN
Serves 2

2 boneless, skinless chicken breasts, thinly sliced
1/4 cup spinach
3 tablespoons dijon mustard
2 ounces brie, sliced
Salt & pepper

Spread dijon mustard over chicken and layer with spinach and brie.

Beginning at the small end, roll cutlets and place on a lined baking sheet. Season with salt & pepper.

Broil for about 10 minutes.

  • 2 boneless, skinless chicken breasts, thinly sliced
  • ¼ cup spinach
  • 3 tablespoons dijon mustard
  • 2 ounces brie, sliced
  • Salt & pepper
Instructions
  1. Spread dijon mustard over chicken and layer with spinach and brie.
  2. Beginning at the small end, roll cutlets and place on a baking sheet lined with aluminum foil.
  3. Season with salt & pepper.
  4. Broil for about 10 minutes.

    My broiler just has high/low settings, which should I be using? Low? What about position in the oven? Just wasn’t sure if it should be on the middle rack or closer to the heating element. Please let me know what you think. Thank you!
