Tilapia Burgers & Watermelon Salsa
Makes 8 burgers
2 pounds fresh or thawed tilapia
1 cup panko
2 tablespoons dijon mustard
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 avocado
1 cup watermelon, chopped
1/4 red onion, chopped
1/2 cup cilantro, chopped
1 lime
8 whole wheat buns
Pulse tilapia in a food processor until no large pieces remain.
Transfer to bowl and add garlic, mustard, panko, salt, and pepper. Mix until ingredients are distributed throughout. Form into 8 evenly-sized burgers.
Heat skillet over medium heat and cook until golden brown on each side, about 4-5 minutes. Meanwhile, chop cubed water melon into small chunks.
Add cilantro, red onion, and lime juice. Heat buns in oven under high broil until toasty. Serve with avocado and salsa.
