TACO CRESCENT ROLLS

June 26, 2012

My friend/homie/confidant/bridesmaid Carmon has to do nothing to get me to come over other than tell me she is making this. I have eaten and loved it so many times, it is shocking that it did not dawn on me until about two weeks ago that I could possibly ask her for the recipe and just make it for myself. I am new at not living the dorm lifestyle. I have a kitchen now!

TACO CRESCENT ROLLS from Rachel Schultz

TACO CRESCENT ROLLS
Serves 3-4

1 pound ground turkey or beef
4 tablespoons homemade taco seasoning
1 onion, diced
15 ounces black beans
15 ounces corn
1 cup cheddar cheese,  shredded
2 tubes crescent roll dough
Sriracha sauce

Preheat oven according to 375 degrees. Heat skillet over medium and brown meat. Once partially browned, add onions to pan. When nearly fully cooked, season with taco seasoning. Stir in black beans and corn. While meat is cooking, shape crescent roll dough into a ring, with the base of triangles partially overlapping. Lay meat fill in a ring across crescent rolls. Top with cheese.

Fold tips of triangles to center of circle and secure meat and cheese inside. Bake for 10-13 minutes. Allow to cool and serve with sriracha, salsa, sour cream, or guacamole.

I made this tonight and it’s now my husband’s favourite meal!

  • Hi Rachel!

This is a family favorite at my house – SO easy, my kids love it, and I can make it dairy-free (for the hubs). We call it “Taco Ring!” Delicious! And for extra yumminess, I drop a little sour cream over the top when it’s ready to be consumed. Mmmm…. I also wanted to say that it’s ALWAYS nice finding women who share my values for things in life – answering God’s calling to be good helps meet for our husbands. I will definitely be visiting often (I even pinned some of your recipes to Pinterest)! Thanks! :)

Jenny, thanks so much for the encouraging message! Yes, Carmon, the original maker, also calls it Taco Ring :)

Hi, I’m attempting to make this recipe, however I can’t tell from the picture how you arranged the crescent roll dough. You said place them in a circle partially overlapping, but I can’t really visualize that and the picture doesn’t show all of them laid out, it’s a bit too zoomed in for me to see what’s going on. I ended up doing the best I could (it kind of worked, but isn’t really right), but would love to do it the way you did it next time. Is there a way you could post another picture of that step of the process?

    Thanks for the recipe!

The shortest side of the triangle goes to the center, with the tip facing out. Hope that helps!
