What do you do when your husband loves rice pudding, but it typically requires an hour of uninterrupted stirring by hand at stove to make? Answer, you do it sometimes. But also the answer, this slow cooker rice pudding was born. I really like this stuff. Like, really, really like it. It takes like one second. Children will be like yes, please. Girls in their 20’s who are bloggers (okay this is me) will be like yes, please. THE HUMAN RACE WILL BE LIKE YES, PLEASE.
Slow Cooker Rice Pudding
Makes about 5 cups
2 cups rice
24 ounces evaporated milk
14 ounces coconut milk
1 and 1/2 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
Cinnamon sugar, coconut, or chocolate chips for toppings
Add all ingredients into slow cooker (except toppings) and stir to combine. Cook on high for three hours. Serve with desired toppings.
