slow cooker rice pudding

What do you do when your husband loves rice pudding, but it typically requires an hour of uninterrupted hand mixing to make? And thus, slow cooker rice pudding was born.

Slow Cooker Rice Pudding
Makes 5 cups

2 cups Arborio rice
36 ounces fat free evaporated milk
14 ounces light coconut milk
1/4 cup water
1 and 1/2 cup sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
Cinnamon sugar, coconut, or chocolate chips for toppings

Add all ingredients into slow cooker (except toppings) and stir to combine.

Set cooker to high and leave for 3 hours. After cook time is complete, allow pudding sit for 30 minutes to an hour. Serve with desired toppings.

If you don’t have coconut milk can you use something else? suggestions please! AND,,,,, can you use any kind of rice?

You can find coconut milk at most regular grocery stores. As for a different rice, I’ve only tried this recipe with abrorio, but I suspect any would work.
