CHUNKY APPLE BREAD

So very filling. This is a power breakfast. Note to self: make this next time I have a job interview. Start the day with this and you can’t miss.

CHUNKY APPLE BREAD
Serves 12

2 cups applesauce
8 apples, peeled and sliced
1/2 cup butter, softened
1 and 1/2 teaspoons salt
3 cups whole wheat flour
1/2 teaspoon baking soda
3 teaspoons cinnamon
2/3 cup sugar
3 eggs
2 teaspoons vanilla extract
1/3 cup apple juice

Preheat oven to 350 degrees. Coat sliced apples in cinnamon and half of sugar.

Mix together eggs, applesauce, butter, vanilla, and juice. Slowly incorporate flour, baking soda, remaining sugar, and salt.

Pour half of batter into a greased bundt pan and layer half of apples on top.

Continue layering with remaining apples and batter.

Bake in the oven for about 75 minutes or until a toothpick comes out clean.
