CILANTRO LIME CHICKEN

Ah yes, one of my baseline ways to make chicken for mexican dishes. (The other go-to is this orange chipotle one.) This guy has that classic cilantro and lime combination that is quintessential fresh. And great for tacos AND MORE types of mexi. I grill it. You don’t have to grill it, but it is very good if you grill it. Below are instructions for roasting in the oven which is still delicious and VERY MUCH worth your while. I find marinades really pretty. Is that strange?

CILANTRO LIME CHICKEN

Cilantro Lime Chicken
Serves four to five

4 boneless, skinless, chicken breasts
1/3 cup lime juice (about three limes)
2 tablespoons honey
1/4 cup cilantro
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder (or 4 cloves garlic, minced)
1/4 teaspoon red pepper flake

Combine ingredients in a gallon plastic bag. Allow to marinade between two hours and overnight. It’s flexible. Do what you can and the longer the better.

Preheat oven to 450 degrees. Arrange chicken in a foil lined 9×13 baking dish. Roast for 45 minutes.

    Hi Rachel,

    I tried this out tonight and it was delicious! Really really tasty and full of flavour.

    However, I only used one chicken breast (sliced in two – probably about 150-200g each) and didn’t adjust the marinade portions so I’m not sure how it would spread over 4 chicken breasts as it seemed to just cover mine. The sauce I had would perhaps cover two chicken breasts at a stretch.

    I did add more garlic (cos I love it!) and just served with veg and brown rice.

    My husband and I had this for dinner tonight. IT WAS DELICIOUS! This is the first time I have ever left a comment regarding a recipe ever! It’s that good! Followed the exact recipe with a few exceptions First we really like cilantro so added a bit to the marinade. Didn’t have any Dijon mustard, but we had honey mustard so I used that instead. I cooked the chicken wrapped in a foil packet for 35 min. We served it over jasmine rice. It has a real fresh flavor to it…definitely try it, you won’t be sorry! Thank you for sharing this recipe!!.

        I am making this cilantro-lime chicken dish and hope I didn’t mess up on the cilantro. I have home grown cilantro I dehydrated and the marinade looks positively green! Since I was using 6 chicken breast I added a half percent more of each ingredient. Reading the reviews, I see someone said they didn’t have Dijon mustard so they used Dijon honey, but I didn’t see that in the recipe. There is a large white blank area under the recipe on my screen. Did my phone not download the complete recipe? What did I miss?

    Cooked this on the grill tonight for dinner. Added about a cup of diced tomatoes on top 10 minutes before I took it off the grill. It was absolutely amazing and a burst of flavor in every bite!

    I tried this the other day and it was a big success! I added just a pinch of sugar to the chicken before it cooked and I think it really cut some of the acidity and brought out more of the lime flavor! Also *good idea* I created tin foil packets! I laid down sliced sweet potato, bok choy, red and green pepper and then the chicken breast on top. I made individual packets and everything steamed and tasted great! Lots of veggies too!
