BEST COBBLER YOU’VE EVER HAD

Okay, okay. My inner voice is saying I cannot tell you it is the best cobbler you’ve ever had. I will just tell you it is the best cobbler David and I have ever had. (But if you have eaten a better one, you must be sending your girl Rach the recipe! Do not hold that out on me). (But as I said before, I am pretty confident it doesn’t exist). I did not even mention how versatile this dish is. Try with other fruits – perhaps blackberries, lemon pie filling, or something crazy like pineapple. Pictured here is a peach version.

I love peach for a cobbler in the summer!

What makes this cobbler special is it has a creamy filling layer. We still add the vanilla ice cream too!

BEST COBBLER YOU’VE I’VE EVER HAD
Serves twelve

1 box yellow cake mix (not baked, just the powder)
1/3 cup butter, softened
2  eggs, divided
4 peaches, sliced
8 ounces cream cheese
1/3 cup sugar
1 teaspoon vanilla
Vanilla ice cream

Preheat oven to 350 degrees. In a stand mixer, combine cake mix, butter, and 1 egg. Reserver 1 cup of crumble for topping. Press remaining dough into base of a greased 9 x 13 baking dish. Bake for 10 minutes.

In the stand mixer, mix together cream cheese, sugar, 1 egg, and vanilla. Layer peaches on top of bottom crust. Pour cream cheese mixture on top of peaches. Top with reserved crumbs. Bake for 30 minutes.

    I was wondering the same as another reader, do I need to refrigerate leftovers or can it sit out like cobblers normally can? I wasn’t sure since it has the cream cheese in it. This looks amazing and I want to try it! Thanks for sharing!

    Is 4 peaches really enough for a 9×13 size dish? Is it supposed to be more cakey than fruity? Just curious because I made a cobbler that size this summer that called for 8 and my hubby said it needed more peaches.

    So…. I’ve made this recipe 30 times and my cream cheese stuff seemed thick and I Charles it up to the cream cheese not being left out long enough . I put it together and popped it in the oven and realized I forgot the fracking egg for the cream cheese. Is this gonna be ruined ? Lol

    We’ve been making this recipe for years, and just love it! If we don’t have a cake mix box on hand, it is still delicious with a DIY cake mix recipe. I’ve also subbed strained Greek yogurt (so it’s as thick as cream cheese) in a pinch, and it’s always fantastic. You just can’t go wrong!

  • I made this recipe yesterday. It was delicious. I use strawberry and cherry pie filling instead of peach but still tastes wonderful. I will try blueberry next time. The only thing I did different is that I accidentally add more butter (5g) more so it’s not crumbly. I will stick to the recipe next time. One cup crumbs for topping didn’t cover the entire layer. However these are small details. Still good . I will make them again. Thank you for the recipe!

    The cake was great big hit. Only thing I didnt like was that it fell apart and didnt stay firm. I drained the peaches and on the raspberries one I drained and added little flour to the fruit. Any suggestions?

    Just made this for diabetic boyfriend. I used a sugar free yellow cake mix and Splenda instead of sugar in the cream cheese mixture. Delicious! I also sprinkled sliced almonds on top before baking. Added a nice little crunch. Will definitely make again!

    I found too that 1/2 cup of topping was not enough so luckily I saved a one cup. I used a lemon cake mix with fresh blackberries and it did take longer than 30 min. to bake,more like 45min. I saw someone else mention of doubling the recipe, I might try that as well next time, otherwise it a stretch for everything.

    Recently retired and now have time to do so many things I put on my bucket list. I grew up on a farm with a big family. Started cooking as a child, but not with a cookbook, but learning from my mama and granny using terms like “a pinch, half hand scoop, ’bout this much, enough flour ’til it feels right’, the southern, ol time scratch cooking. Don’t remember measuring cups either. My husband of 44 years loves my cooking, but I want to take it to another level, so I googled a recipe for the BEST peach cobbler ever and luckily got to your site which I truly enjoyed reading about you and your family. I made your peach cobbler, and it lasted less than 24 hours. It IS the very best peach cobbler I’ve ever eaten, and I rarely eat sweets. The cream cheese and small amount of sugar keeps this from being too sweet. I made another and it is already gone. (Have you ever seen a 66 year old man lick his plate?) He did and looked over at me and grinned. He said he was at home and he had to eat every crumb of that peach cobbler, it was sooo… good. He asked what I needed from the store to make another one. He came in with enough to make at least 5 more. He said it wouldn’t hurt to keep the ingredients on hand. I got a chocolate cake mix with cherry pie filling to try with your recipe.       Here’s a recipe for a peach/apple/pineapple cobbler that my family just loves. As a matter of fact, I just took it out of the oven and waiting for it to cool so I can dig in!

      2 cans apple pie filling (about 20 – 25 oz)
      1 can sliced cling peaches (about 30 oz or so)
      1 can CRUSHED pineapple (20 -25 oz)
      (measurements are not exact; get a close as you can.

      Place one stick of butter in bottom of pot. Add the apple pie filling, crushed pineapple, and the sliced peaches, using just half the juice.

      Turn on low heat. Add cinnamon & nutmeg to taste (I use way more cinnamon than nutmeg). Add 1/2 cup light brown sugar/ 1/2 cup dark brown sugar and 1/2 cup granulated sugar.

      Add about 1 t vanilla and 1 t lemon juice (fresh is better)
      Add about 1/2 cup flour, stirring occasionally until the flour dissolves.

      Pour into cobbler dish with pie crust on bottom and around sides to top of dish. I just buy the cheapy two for one 9″ ones from Sav A Lot. You get two in a pack.

      I use one pack to line the 9″ dish. You can make your own pie crust or use ready made as I do.

      After making sure there is crust on the bottom and sides of container, I pour in the pie filling. Add a top crust; slit to allow steam to escape or add your own favorite crumble on top.

      Bakes for and hour and 15 minutes at 375. I bake mine until the crust is a light brown. You can bake yours longer or shorter depending on your preference.

      I’ve been making this cobbler forever. Before I retired, I took it to work EVERY Christmas. I now make it at Christmas & Thanksgiving. I’ll also make it for a special occasion.

  • It was very easy. However, I did not like it. Had to cook much longer than recipe suggests because the 7-up was still floating on top and the cake mix was still dry and powdery. When I finally took it out of the oven, there was still some dry cake mix on the top. It had an unappetizing appearance and it had an artificial taste. But what should I expect when cutting corners by using a packaged cake mix.

    I didn’t have a yellow cake mix on hand, so i usesd a lemon cake mix instead. YUMMMY!

    I plan on using the lemon cake mix again, but using blueberries instead of peaches, or even a combination of both.

    Actually, I wonder if the same technique would work with a chocolate/fudge cake mix, and cherries…or cherry pie filling? Or……pineapple cake mix with crushed pineapple, or almond cake mix with apple filling? I’m just say’n!!

  • Omg! This is the best cobbler I have ever had or made! So yummy I’m making a second one with the rest of the fresh peaches from Palisade, Colorado that I bought at a farmers market. My husband loved this cobbler. I live in Colorado so we have awesome peaches to work with. I’m going to make it with 2 cake mixes this time to make it a deeper cobbler.     5 stars…Yum! I just made this. I’ve been craving peach cobbler lately. I made it in an 8×8 glass dish using a gluten free boxed cake and added blackberries. Oh myyyy! Seriously good! It’s not as good as grandmas but this recipe is fan-freakin-tastic! The dream cheese was a lot more mild than u was expecting. Nice subtle addition. I added 5 mins to crust only bake and 10 mins to the total bake time. Awesome perfection.

    I made a big boo boo! Oops. I put the cream cheese in the cake mix with the butter, whoops, well it came out more like a cobbler. For fruit I used mand oranges, pineapple, and strawberries (what I had on hand). I also used stevia in the raw instead of sugar. Thus far it looks great!

      Hey Melanie this is a peach cobbler recipe stevia does not cook right in any recipe irregardless of what anyone says. Blueberries and anything else is just that a berry cobbler cream cheese also does not belong in a traditional cobbler period. also yellow cake is just that too a yellow cake with peaches in it. Sorry it may be good but not a cobbler. maybe a gobble up er! something else. Rate is a 1 for effort. Ingredients for cobbler is Milk, butter, Flour, Cinnamon, nutmeg, Brown sugar and white sugar, vanilla, greased pan or cooking Bowl. Pour the peaches over the mixture and do notstirand you will have a great peach cobbler.

    I have made this recipe a few times now! I did quite a bit of canning last year and have so many cans of peaches and this recipe is a perfect way to use them. It’s so easy and it’s made using ingredients that I usually always have in my pantry and fridge. My husband loved this recipe as well!

    This is a great cobbler. I ran across the recipe when making dinner and happened to have some fresh/frozen peaches in the freezer. I didn’t have any cream cheese on hand, so I pureed cottage cheese as a replacement, also used egg beaters instead of regular eggs. My Mom was in town and is on weight watchers, so the substitutions helped to “lighten it up” for her.

    This is a keeper!

    This made a really great cobbler! I used fresh peaches and made it in two deep-dish pie plates and it came out wonderfully. I didn’t have ice cream but poured a tiny bit of milk on it, while it was still hot, and it was very good.

    This is a great recipe. Had some fresh peaches that need to be used. I baked up a pan of this and took it to church and six 14-15 year old girls wiped out the pan. They loved it.     Oh my goodness. I have this habit of always researching ‘the very best recipe of _____’ and naturally, researched the very best peach cobbler recipe for a dinner with friends the other night.     So there’s a dutch oven variation of this recipe we use when we go camping and yes, it is the most mazing cobbler ever. We put marachino (sp?) Cherries in ours but still pretty much the same resulting tastiness. Glad to find a home recipe :)

    After the crust had cooled I poured half the juice from the peaches(I used canned) over the crust & poked holes in it, making it much moister. Added the other half over the finished dish, added a lot moisture to the cobbler.

    Just tried this really easy cobbler and it is terrific. I cannot say it’s the best I’ve ever had, but it is very good and super simple to make. My only complaint is that the cake makes the crust a bit too sweet for my liking. I prefer a less sweet crust, similar to Rachel Ray’s cobbler recipe. However, this is great when you need something fast. I also think that with fresh raspberries it would be superb. The tart berries would offset the sweet crust. Another option would be to add a little fresh lemon juice to the peaches or the crust mix, or even try squeezing the lemon over the cobbler before you serve it. Thanks so much for this!

      I’d probably just have it softened at room temperature, not melted.

      No, just nuke it for 5 minutes in the microwave if you just pulled it out of the fridge. You need to mash it into the cake mix with a fork, so you need it soft…not melted.

    Has anyone made this with frozen peaches? Any reason it wouldn’t work?

    This was a great recipe that I will definitely make again. I used white cake mix as that’s what I had on hand, and fresh blueberries in place of canned peaches. Was not too sweet… The blueberry flavor came through beautifully. I was concerned because of some comments about it being overly sweet, but I think that’s because of the canned peaches. I have a suspicion that fresh fruit of any kind will be less sweet than their canned counterparts.
    Next time I will add a dash of almond extract to the cake mix to complement the blueberries, but I was really happy with this recipe overall. I didn’t even serve it with ice cream, but I think that would have taken it to a whole other level!

    I searched the recipe but I could not find out if I am suppose to drain the canned peaches or not. I did drain them and the cobbler seemed dry. Should I or should I not? The cobbler was tasty but not great. I would like to try it again because of the comments and it sounds so good.

    It was just a bit too sweet for me, but my boys enjoyed it. I think I’ll squeeze lemon into the peaches, as well as some fresh grated ginger and/or lemon and orange zest… perhaps a shake of cinnamon? I plan on making this again when my BIG family comes to town on the 4th of July, so I’ll get a better idea of how or if this is a crowd pleaser for us.
    Easy recipe, which I REALLY appreciate!

      You can buy yellow cake mix in a box from the grocery store… I used Pillsbury brand in the baking aisle.

      It is a cake mix (dry) that comes in a box that has most of the ingredients already added. All one has to do to make a “homemade” cake is to add eggs, vegetable oil and water and bake. The cobbler uses the dry mix to make the bottom crust.

    I just made this today. I absolutely loved it and so did my husband. I did tweek the recipe a bit. I used the yellow cake mix but I added cinnamon,nutmeg and vanilla. I also used the juice from the peaches. Thank you for sharing

  • Yum!! I tweaked this recipe sooo much only because I didn’t have all of the ingredients. Instead of peaches, I used mango pulp. Mixed the pulp along with some cream cheese, sugar, egg, plain yogurt, and a tiny bit of vanilla extract. Turned out a bit more liquidified than I wanted. (Don’t know how I can thicken it, any suggestions?) but I poured it over the baked 1st layer then added the rest of the crumbs on top. For a newbie baker making all the tweaks, the ‘cobbler’ turned out pretty awesome!! I will come back to this recipe though when I have all the ingredients. *adding to my recipe list*

    Rachel, is that vanilla ice cream added to your cobbler in the picture? I was going to ask if you used Cool Whip or whipped cream to top it off but it looks more like ice cream melting on top of the cobbler.

    Heather…you suggested adding peach or apricot brandy but didn’t say how much..Can you tell us how much?

    For the person who suggested using peach pie filling, did you add any additional spices. Does the peach pie filling come in Lite variety? I have used the Lite versions of cherry pie filling and prefer it. Will check the Comstock website.

    Saw your picture for the peach cobbler on pinterest and bought 2 cans of peaches and never printed the recipe off. Duh! I just found this again and printed off the recipe and read all the comments and suggestions. I will print this recipe off and bookmark it. I like the idea of the peach pie filling being used. And DEE, how much peach scnapps did you put into this? I had a fuzzy navel before I went to bed last evening because I was so exhausted and I slept good, with the exception of DH coming in and asking for a pain pill. I think I will print some of the comments off with helpful tips or jot them down on back of recipe that I printed out. Need to add the cake mix to my grocery list.

Just made this using sugar free cake mix by pillsbury & sliced peaches by Libby’s that are no sugar added made with Splenda & replaced sugar with Splenda turned out real good I used the syrup from one jar & half another jar of peaches. Thank you for this recipe hope this will help some other diabetics to have such a yummy dessert.

      Thanks for the recipe. Nicki, I use Spenda in all my recipes now. My husband is diabetic and we love the Splenda and the Pillsbury Sugar Free Cake Mixes. They are delicious and we can’t tell the difference. Thanks for sharing the recipe.

    It looked like the peaches were drained although the recipe didn’t specify. Next time I make it I will use the juice because it’s quite dry, more like a crumble than cobbler and I’d be sure to lessen the sugar and use “lite” peaches because it was very sweet although I used less than the 1/3 cup sugar called for. The crust was nice. It would be good to add some chopped pecans to it.

    • I use canned peach pie filling in my cobblers and it is wonderful. It is all ready to use right out of the can. Sometimes I add some apricot jam, about 1/4 cup and some almond extract to make it even tastier. I’m sure other canned fruit pie fillings would work just as well.

    So it’s in the oven right now, I can’t wait to try it. I did try a large pinch of the crumble (without cooking it, yes I eat raw cookie dough and cake batter) it’s so yummy! I had to stop myself from a huge spoonful! I’m not going to lie, I left some in the bowl when scooping it on the top so I could eat it on the way to the sink!     I have this in the oven right now got the recipe off Pinterest…it looks Delish, and after reading all the comments I am sure it will be. I did add an extra can of peaches didn’t look peachy enough for me. My crust crumbled just fine and I melted my butter a little so it was 1/2 way liquid 1/2 solid…it worked fine. I can’t wait to serve it to the family tonight. Thanks for the recipe, I will have to check out others here on your blog, I love a recipe that doesn’t cost much to make, is easy, and good!!

      I would recommend the day of. It could be refrigerated, but it’s ideal to serve it warm.

    I tried your cobbler tonight, My parents were eating with us so I had to improvise, I used a Sugar Free Yellow cake mix and Splenda Brown sugar and added cinnamon, I will add a little more liquid next time as mine was a little dry but it had a fabulous taste.     This is truly is the best peach cobbler I have ever had! My roommates ask me to make it all the time now lol and it is so easy to put together, the only thing I had a problem with was over mixing the cake mix with the butter and egg, my butter was too soft and it didn’t stay in crumble form so I kinda had to spread the 1/2 cup crumbs onto the cream cheese layer, so annoying but that was my fault so just be careful! Otherwise it was AMAZING!! Thank you for sharing:)

      I bet it would turn out fine. It’d taste slightly different but it’d still be good. I tried this tonight. My family loved it. I accidentally put 2 eggs in the crust so it wasn’t exactly crumbly and I only used 15 oz of peaches. That’s what I get for not reading the instructions. Still mighty tasty but I’ll make sure to follow th directions next time.

    I want to try the apple for my husband but considering that apples are not as juicy as peaches what can i use as a sub for the moisture?

      I think that apples would be fine to use. Maybe cut them up and mix together with a little sugar and cinnamon like your making a pie. I just made this and there isn’t much juice from the peaches so apples would probably be great. I might have to try that. :)

        Try using a can or two of peach pie filling, no additional prepartion for the fruit needed as it is already to go right out of the can. Same for the apple pie fillling and the cherry or blueberry. I use canned pie filling for cobblers and pies and love it. Very tasty!

  • I really enjoyed this – so very simple with a great flavor. I’ve never had the cream cheese mixture with a cobbler, yet it tastes just like a classic cobbler! I did feel like there wasn’t enough peaches when I was making it, so I added an additional 15 oz can, and when we ate the dessert I’m glad I had made the addition. Thanks for the recipe, I can see how I would use it again in the future with other combinations (I’m already kicking myself that I didn’t include some of the blueberries or blackberries that are in my freezer!).

      I make one with any fruit pie filling in bottom of dish (2 cans), then cover fruit with yellow cake mix and cut up a stick of butter on top then bake at 350 degrees until golden brown. Serve with ice cream. It is great.

I also sprinkled the apples with cinnamon before I put the toppings on them, and increased the bake time to 50 minutes. The apples still had a firm texture without being crisp. YUM!

    My mother made something similar when we were growing up except she just used two cans of apple pie filling, one box of butter cake mix and a stick of butter. Pour the apple (or whatever canned fruit you prefer) into 9X13 in pan and cover with dry cake mix. Melt the butter and drizzle over cake mix. Cook @ 350 for about 20 minutes. Delicious. Sometimes she would add cinnamon over the apples and sometimes pecan pieces in the melted butter. However, I am going to give yours a try because anything with cream cheese is a winner!

    • I’m loving that variation! It reminds me of a recipe I’ve seen going aroudn on Pinterest too. Something with cake mix and 7up to make a cobbler. Hope this one doesn’t disappoint! Thanks for your comment.

    • By yellow cake mix I mean any store-bought cake mix. Vanilla or yellow cake works great.
