HOW TO MAKE SALMON PERFECTLY (IN THE OVEN!)

August 20, 2012

Getting salmon just right can be an elusive pursuit. Without having a grill, I had conceded that I would never get to enjoy a perfectly moist and flakey filet. Well, turns out my dreams came true with this perfect method to make salmon. Fish, I’m kind of afraid of preparing it most the time. But not this one! And salmon is my favorite! I actually love making salmon this way now, even better than a skillet or the grill. It gets great color too if you broil it for a bit at the end.

Can you back shrimp with salmon using cold oven method?

  • Linda

You had this same recipe, which I used, but it said, put salmon in cold oven then set temp., to 450 and bake until I think 20-25 mins.,it wasn’t available when I went back?

I have cooked Salmon on grille with great success, going to cook in oven, 2 whole fillets, for a dinner party of 9, have you every baked in oven on Convection roast? And how to do on convection roast

  • Sandra

I recall you having a technique without preheating. You set the temperature and put the salmon in immediately for a specific time (longer than 15 minutes I believe). I used this method in the past and it was perfect! I came back to find it but it’s gone. All the same, you have some brilliant recipes!

I know this sounds like a mistreatment of salmon, but I take melted butter and crushed up ritz crackers to the top of the salted salmon and bake it just like this….SOOO good!

Glad to discover your web site. Love the cold oven salmon. Great for when cooking a lot at once for company. The recipe I was given said to place the pan on the lowest rack. * That would put it nearest the heating element) However, my daughter in law has an oven with only one heating element and it is at the top; so should you place the pan on the top rack? Possibly this is a convection oven; so maybe it would not matter where the rack is. Does anyone have any experience with this?

When fish goes into bake is it WRAPPED tightly with foil, or just setting on layer foil beneath fish?

    • Rachel Schultz

      Just on top of foil

  • Do you cover it with foil or not? Thank you. Thank you for the tip.

    • Rachel Schultz

You’re welcome! There is no need to cover with foil.

This is the perfect cooking method for salmon. I have cooked it numerous times since reading this and it turns out perfect and moist and delicious every time. I steam vegetables to go with it and have rice. You can have dinner on the table in 30 minutes. And my husband and daughter love it. And that’s what counts! Thank you!

Thanks so much for the salmon recipe. I have never cooked it before and didn’t know it could be this easy. Can’t wait to try it.I have only eaten it in restaurants. Will be glad to cook it at home. Thanks

  • I’ve used this method three times now – twice with steelhead and tonight with halibut. Excellent each time! Cooking is much of the pleasure in my life and I love fish, but I’ve always been intimidated about cooking it. Your recipe has been a confidence creator – thanks!
