Healthy. Fresh ingredients. Eating this made me feel like a person who runs ten miles a day and does yoga in the mountains and eats all organic food. To be honest, I don’t have the discipline to do any of that. But, this is healthy and easy, so even I managed.

Curry Pineapple Turkey Bowl
Serves 3-4

1 pound ground turkey
1 tablespoon olive oil
2 teaspoons curry powder
1 teaspoon cinnamon
2 cups pineapple, cubed
3 cups rice, cooked
1 cup carrots, shredded
1 cup zucchini, shredded
Salt & pepper

Heat turkey in a large skillet over medium heat with oil, curry powder, and cinnamon. Cook until browned, about 10-12 minutes. When 2-3 minutes of cook time remains, add pineapple, carrots, and zucchini.

Season with salt and pepper. Remove from heat and mix with prepared rice.
