chicken & spinach lemon angel hair pasta

The fresh and light lemon flavor makes this one of the few pasta entrees that doesn’t leave me feeling so stuffed I could hibernate for all of the upcoming winter months. Healthy, yet filling. Simple, yet oh-so flavorful.

As a side note, today it struck me how strange and perhaps even gross it is that we call this “angel hair” pasta. Strangeness aside, let’s cook this thing.

chicken & spinach lemon angel hair pasta
Serves 3-4

1/2 pound whole wheat angel hair pasta, cooked al dente
1 pound boneless skinless chicken breast, prepared and sliced
4 cloves garlic, minced
1 teaspoon red pepper flakes
2 lemons, juiced
1 cup parmesan, grated
1 cup spinach
3 tablespoons olive oil

Heat garlic, oil, lemon juice, and red pepper over low heat for about 10 minutes. When a few minutes remain, add grated parmesan and stir as it melts.

Remove from heat and fold spinach into sauce until wilted.

Toss pasta and chicken with sauce and top with lemon zest and parmesan.

How do you “prep” the chicken for this recipe?

Cooking it until no pink remains in whatever method you prefer is fine.

I made this but used Spaghetti Squash instead of the pasta. After I cooked the spaghetti squash in the microwave and removed it from the peel, i just threw it in the pan to saute it all together…very tasty!

I cannot wait to make this–I think lemon pasta is one of the truly great bases for any combination of greens and proteins. One I love to make is lemon pasta with grilled shrimp and broccoli rabe : )
