kielbasa & apple stir fry with mini puff pancakes

Fall is in full swing and I am delighting in every moment of it. This weekend we had our shoot for our Autumn edition of Seasons of Love. Look for them to be unveiled soon!

With all things October, there’s no shortage of apple and pumpkin. But I’m definitely not complaining. Hooray to warm, fuzzy Autumn feelings and this cozy, cold weather, savory meal.

Kielbasa & Apple Stir Fry with Mini Puff Pancakes
Serves 3-4

4 eggs
1 cup flour
1 cup milk
Cooking spray
1 pound kielbasa, cut into 1/2 inch cubes
4 apples, cut into 1/2 inch cubes
2 large cooking onions, sliced
2 tablespoons butter
Salt & pepper

Preheat oven to 400 degrees. Whisk together eggs, milk, and flour. Thoroughly spray muffin tin with cooking spray and distribute batter evenly into tins. Bake for 20 minutes and set aside.

Heat kielbasa in a large skillet over medium heat for 5-7 minutes, or until browned. Remove from pan and set aside. Add butter and onions to pan and cook for 3-5 minutes. Add apples and cook for an additional 5 minutes.

Return kielbasa to pan and season with pepper, stirring evenly throughout. Remove from heat and serve over puff pancakes.

Fabulous!!
Easy and quick on the table after a long day at work!
I made a side of green beans, nothing fancy…kept it simple
I also treated us to a nice fall I.P.A…
