Sunday Dave and I met for lunch with the husband & wife couple who did our pre-marital counseling back in the day. As if the invaluable marriage wisdom she gifted me with wasn’t enough, she hooked me up with this sweet, fresh, crunchy, and healthy kale salad. Plus, Kale is a superfood! Whatever exactly that means.
Massaged Kale & Mango Salad
Serves 3-4
1 bunch kale, de-stemed and sliced very thinly
1 lemon, juiced
2 teaspoons honey
1 teaspoon pepper
1 mango, diced
1/4 cup pepitas
In large bowl, add kale, half of lemon juice, and a drizzle of olive oil. Massage until kale begins to wilt. Set aside.
In a small bowl, whisk remaining lemon juice with the honey, and pepper. Add oil and whisk together. Pour dressing over the kale, add mango and pepitas, and toss. For best results, allow to sit overnight before serving.
