Bacon meets veggies. Maybe this is one step closer to satisfying the meat-loving man + vegetarian/health nut woman couples archetype in the world. (Doesn’t at all describe us, but I still dig this salad.)
Bacon & Brussel Sprout Salad
Serves 5-6
1 lemon
1 orange
1/2 cup olive oil
1 and 1/2 cup bacon, crumbled
25 brussel sprouts, quartered
1 cup almonds
1 cup parmesan cheese, shredded
Salt & pepper
Squeeze juice of lemon and orange into a large bowl.
Whisk juices together with olive oil. Season with salt & pepper. Set dressing aside. Place brussel sprouts into food processor and pulse until shredded.
Transfer brussel sprouts to bowl with dressing.
Add almonds to processor and pulse until coarsely chopped. Combine almonds and parmesan with shredded brussel sprouts.
Toss with dressing and serve.

HMMM! THIS LOOKS YUMMY! any ideas what i could change up the brussel sprouts with? Hubby really dislikes them!
Traditional romaine would be fine.
