It’s seems like my/everyone’s social life is in a dead zone right now.
You might just have scoffed at your screen. You’re probably not in a dead zone in the sense that people are frantic for the holidays and everyone is meeting with their family and has a million things to do.
But what I do mean is that I feel like this time of the year is also really transitional in a way too. Like, all my bible study groups or reoccurring appointments are on pause. And if there’s an old friend you want to catch up with it’s always, “ok, yeah! Let’s reconnect in January.”
I’m just not crazy about it. I understand it, though. Totally. Maybe what I should take from this is that I should allow myself to be okay with not being in a strict routine for a few weeks. And not be bothered when schedules are less regular. Maybe I should just let myself rest.
Strawberry Nutella Bars
Serves 15-20
10 ounces graham crackers (cinnamon are pictured, but I recommend chocolate)
1/4 cup sugar
1 stick butter, melted
1 cup strawberries, diced
2 tablespoons sugar
1 tablespoon cornstarch
1/2 teaspoon vanilla
1/2 cup Nutella
1/3 cup sugar
1/3 cup flour
3 tablespoons butter, softened
1/4 teaspoon salt
Preheat oven to 350 degrees. Place graham crackers in a food processor and pulse until a fine powder forms.
Combine graham crackers with 1/4 cup sugar and butter. Press graham mixture into the base of 9×13 greased baking dish and bake for 10 minutes.
Meanwhile, mix together strawberries, 2 tablespoons sugar, corn starch, and vanilla.
Microwave Nutella for 15 seconds and spread in an even layer over baked graham crust. Spread strawberry mixture across Nutella. Mix 1/3 cup sugar, flour, butter, and salt until a crumb forms, with no large butter pieces remaining. Sprinkle over strawberries and bake for 30-35 minutes.
Cut into squares and serve warm.
