Serves five to six

3 tablespoons sesame oil, divided
14 ounce extra firm tofu block, sliced into centimeter square pieces
1/3 cup soy sauce
1/3 cup peanut butter
1 tablespoon grated ginger
2 tablespoons rice wine vinegar
1 teaspoon garlic powder
1 tablespoon brown sugar
1/4 teaspoon red pepper flake
3 carrots, diced
1 cup soy beans (edamame)
1 onion, diced
4 green onions
2 tablespoons sesame seeds
White rice

Heat 1 tablespoon sesame oil in a large skillet over medium heat. Pat tofu dry. Add tofu to pan and saute for 8-10 minutes, stirring occasionally.

Prepare sauce by blending soy sauce, peanut butter, ginger, 2 tablespoons sesame oil, rice wine vinegar, garlic powder, brown sugar, and red pepper flake.

Add sauce, carrots, edamame, and onion to tofu and saute for 3-5 more minutes.

Top with green onion and sesame seed and serve with white rice.

    If you toss pressed and dry tofu in cornstarch before pan-frying, it gets really crispy! I’m definitely going to try this recipe.
