Serves 2

1 cup flour
1 teaspoon baking powder
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes
1 cup milk
1 egg
1 cup mozzarella, shredded
1/4 cup Parmesan, grated
1 cup pepperoni, sliced
Pizza sauce

Preheat oven to 375 degrees. Stir together flour, baking powder, italian seasoning, and red pepper flakes. In a separate bowl, whisk together milk and egg. Combine wet and dry ingredients. Fold mozzarella, pepperoni, and parmesan into mixture. Divide batter into a greased muffin tin. Bake for 20-30 minutes, or until golden brown. Serve with pizza sauce.

    2/28/14 — I made these for a happy hour at our RV park in Indio. Use a mini-muffin tin. I cut Italian seasoning to 1/2 Tablespoon (1T is a lot), cut red pepper flakes to 1/4 teaspoon (1 t would be too spicy for most people, especially old people, lol). Deli pepperoni came in 1″ sliced coins so I used about 1/4th pound with coins cut in 1/6ths which equalled about 1/2 cup. That was plenty. I filled the cups to the top. I doubled the recipe and it made about 36 muffins. Easy recipe and they taste great.

    I want to make these for my family but I have a 2 year old, do the red pepper flakes make it have a “kick”? I’ve never used red pepper flakes before, because I’m scared of them to be honest, but I have them in my cabinet so I wouldn’t mind trying them since my taste buds have changed dramatically since having my son (now I like slight spice!) but I want them to be “son friendly”. What do you recommend? Also have you tried putting other stuff in them other than pepperoni? As a mother to a picky water I try to find ways of “sneaking” in veggies and any nutritional foods when possible so I was thinking of throwing in some chopped veggies, like bell pepper, maybe corn (we are big corn nuts, and believe it or not it’s supper yummy on pizza)! Thanks for your blog, I love finding easy, cheap recipes that don’t call for strange ingredients that I’ve never heard of! :-)

      Throwing in other veggies is great and also you wouldn’t be missing anything to just skip the RPF.
