PEPPERONI PIZZA MUFFINS

You may have noticed in my photos – I got a new camera! It’s very exciting and fun and I can tell a difference in photo quality right away. I hope it makes an enjoyable experience for you as the reader too. These little muffins are a fun, snack-y, type food. With enough of them it can feel as filling as a meal. Definitely right at home on a game day or afternoon snack setting as well.

PEPPERONI PIZZA MUFFINS

PEPPERONI PIZZA MUFFINS
Serves 2

1 cup flour
1 teaspoon baking powder
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes
1 cup milk
1 egg
1 cup mozzarella, shredded
1/4 cup Parmesan, grated
1 cup pepperoni, sliced
Pizza sauce

Preheat oven to 375 degrees. Stir together flour, baking powder, italian seasoning, and red pepper flakes. In a separate bowl, whisk together milk and egg. Combine wet and dry ingredients. Fold mozzarella, pepperoni, and parmesan into mixture. Divide batter into a greased muffin tin. Bake for 20-30 minutes, or until golden brown. Serve with pizza sauce.

    The Idea for pepperoni pizza muffins are pretty unique and I cannot find myself stopping at one. Whenever I bake them everyone in the house is delighted.

  • My children love these. We make them a lot. We also brown hamburger and mix in bbq sauce and put that in the biscuit. Then we top with cheese, it makes a great bbq cheeseburger.

    These were great! Very adaptable. The ratios for these muffins make it a solid staple recipe. There are many muffin recipes but ratios are tricky – too much flour or baking powder… so this is a good one. Both my picky eater sons loved them and my husband enjoyed them too. I mixed some extra mozzarella cheese, ricotta, Parmesan cheese, and garlic powder together and added a spoonful to each muffin. I under cooked them slightly. Very tasty! We are testing out school lunch ideas and this received two thumbs up! Thank you for developing and sharing this recipe :)

    2/28/14 — I made these for a happy hour at our RV park in Indio. Use a mini-muffin tin. I cut Italian seasoning to 1/2 Tablespoon (1T is a lot), cut red pepper flakes to 1/4 teaspoon (1 t would be too spicy for most people, especially old people, lol). Deli pepperoni came in 1″ sliced coins so I used about 1/4th pound with coins cut in 1/6ths which equalled about 1/2 cup. That was plenty. I filled the cups to the top. I doubled the recipe and it made about 36 muffins. Easy recipe and they taste great.

    I want to make these for my family but I have a 2 year old, do the red pepper flakes make it have a “kick”? I’ve never used red pepper flakes before, because I’m scared of them to be honest, but I have them in my cabinet so I wouldn’t mind trying them since my taste buds have changed dramatically since having my son (now I like slight spice!) but I want them to be “son friendly”. What do you recommend? Also have you tried putting other stuff in them other than pepperoni? As a mother to a picky water I try to find ways of “sneaking” in veggies and any nutritional foods when possible so I was thinking of throwing in some chopped veggies, like bell pepper, maybe corn (we are big corn nuts, and believe it or not it’s supper yummy on pizza)! Thanks for your blog, I love finding easy, cheap recipes that don’t call for strange ingredients that I’ve never heard of! :-)

      Throwing in other veggies is great and also you wouldn’t be missing anything to just skip the RPF.

      I made these, but found they came out fairly flat. I guess I thought my baking powder would allow them to fluff a little like normal muffins.

      Are they supposed to have a more normal muffin growth, and if so, would over mixing or baking powder be a likely culprit?
