BREAKFAST PIZZA

Have you heard of the 5 o’clock club? Well, I am not in it, but I maybe should aspire to be? Follow that link to read more. Plus, here are some tips from the ladies at blog to help make it happen. My goal is actually not really 5:00am, but 7:00am. I know, embarrassing, right? That is not even that early. But it is my humble little ambition. One of my best motivations for getting up early is if there is a tasty breakfast waiting for me. Seriously, this is like my secret password for unlocking the door to “morning person.”

If I am tossing in bed and completely unmotivated to wake up, and then I remember I have something really good (maybe cake?) I can eat for breakfast – you just heard my feet hit the floor. (Yes, I have eaten cake for breakfast. Many times.)

BREAKFAST PIZZA

BREAKFAST PIZZA
Serves 3-4

1 batch pizza dough
1/2 pound bacon, cooked and crumbled
1 cup parmesan, grated
1 cup mozzarella, shredded
3 eggs
Salt & pepper
Olive oil
Chives
Marinara sauce for dipping

Preheat oven to 450 degrees. Roll pizza dough out onto floured parchment to about 3/4 inch thick. Brush crust lightly with olive oil. Arrange parmesan an mozzarella on top of dough in an even layer. Top with bacon crumbles. Crack each egg over toppings. Season with salt & pepper. Transfer parchment paper to baking sheet. Bake for 10-12 minutes, or until eggs are cooked to your liking. Top with chives. Slice and serve with marinara as dipping sauce.
