CHICKPEA BRUSCHETTA SALAD

Over the past year, I discovered I love chickpeas. And I have been writing my love poem to them ever since. Here, the love bug strikes again with this fresh appetizer.

Or, add chicken, and you have got a yummy lunch/dinner entree.

CHICKPEA BRUSCHETTA SALAD from Rachel Schultz 2CHICKPEA BRUSCHETTA SALAD
Serves 2-3

15 ounces chickpeas
1 pint grape tomatoes, halved
1 cup basil, chopped
3 ounces mozzarella, sliced
2 cloves garlic, minced
1 tablespoon red wine vinegar
1 tablespoon apple cider vinegar
2 teaspoons olive oil
1/2 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon pepper

Stir together chickpeas, tomatoes, basil, mozzarella, and garlic. In a separate bowl, whisk red wine vinegar, apple cider vinegar, olive oil, honey, salt, and pepper. Drizzle salad with dressing.

    Is the nutritional value (calories per serving, how many carbs, etc) listed somewhere for each of your recipes (especially this one) and I’m just not seeing it?

    Very good!I separated salad from dressing until I want to use it since I live alone and can’t eat it all inone sitting. I had to use goat cheese instead of the mozzarella because of allergies.

    how long will this keep in the fridge? I want to eat it at least 2-3 times this week for lunch. It’s delicious!

    Just made this salad. Very tasty and satisfying. I’m an onion freak, so added a little sweet onion to it, but it is good just as written.

    Just FYI the recipe calls for honey but it’s omitted in the directions. Is adding the honey a mistake or is it mixed in with the other wet ingredients?
