Chicken & Black Bean Smokey Rice Skillet by Rachel Schultz

CHICKEN & BLACK BEAN SMOKEY RICE SKILLET
Serves 3-4

1 onion, chopped
1 zucchini, chopped
1 yellow squash, chopped
2 garlic cloves, minced
3 cups cooked chicken, shredded
15 ounces black beans
4 cups rice medley, prepared
2 tablespoons cumin
1/2 cup parsley, chopped
Salt & pepper
Olive oil

In a large skillet, combine onions and a drizzling of olive oil. Allow to cook for about 3-4 minutes. Add zucchini, squash, and garlic and cook for an additional 5-6 minutes.

Stir in chicken, strained black beans, cumin, rice, and salt & pepper. Cook for about 5 minutes, or until warm throughout.
