We’re moving today! I’m smiling a lot, through the fatigue from all the packing and cleaning. We have both been so eager to be out of the old place and into the new. Pictures coming soon of our pad. Yummy tortellini for now.
Lemon Butter Tortellini
Serves 3-4
1 pound cheese tortellini
1 cup broccoli
4 tablespoons butter
1 cup spinach
1 red pepper, chopped
1 lemon
Salt & pepper
Shredded chicken (optional)
Prepare tortellini according to package instructions.
Meanwhile, melt butter over medium heat in a large skillet for 1-2 minutes. Add red pepper and brocolli. Allow to cook for 1-2 minutes. Add cooked tortellini, lemon zest, juice of lemon, spinach, salt & pepper.
Stir over heat until spinach is wilted.
