LEMON BUTTER VEGETABLE TORTELLINI

We are moving today! I am smiling a lot, through the fatigue from all the packing and cleaning. We have both been so eager to be out of the old place and into the new. I will be sharing some of our new place soon. Even when you’re moving the need for meals doesn’t stop! Yummy tortellini for now. (Also isn’t there something really fun about pizza or some kind of take out food the first night in the new place?)

LEMON BUTTER VEGETABLE TORTELLINI
Serves 3-4

1 pound cheese tortellini
1 broccoli crown, chopped
4 tablespoons butter
1 cup spinach
1 red pepper, chopped
1 lemon, juiced and zest
1/2 teaspoon salt
1/2 teaspoon pepper

Prepare tortellini according to package instructions. Meanwhile, melt butter over medium heat in a large skillet for 1-2 minutes. Add red pepper and broccoli. Cook for 2-3 minutes. Add tortellini, lemon zest, lemon juice, spinach, salt, and pepper. Stir over heat until spinach is wilted.
