JALAPEÑO CHEDDAR MEATBALL SUBS

I am not sure what it is exactly. But guys just go crazy for meatball subs. Has anyone else noticed this? Boys love them. I am not trying to put all men in a box, but take my husband for example. You could probably consider him the jock-type. And if he just got home from playing football, and I am casually like, “oh hey, did not see you there, I made these meatball subs, no big deal or anything, want one?” He does NOT hold back his excitement as he grabs one. Or five.

(But real talk for a second. I am a girl. And I think these are pretty super yummy.)

JALAPEÑO CHEDDAR MEATBALL SUBS 1JALAPEÑO CHEDDAR MEATBALL SUBS
Makes about  5 subs

1 pound ground chicken breast
1 egg
1/3 cup panko bread crumbs
2 garlic cloves, minced
2 jalapeño peppers, 1 diced and 1 sliced
16 ounces cheddar cheese, shredded
8-10 sandwich buns
1 teaspoon salt
1 teaspoon pepper

Preheat oven to 425 degrees. Combine chicken, egg, panko, garlic, diced jalapenos, half of cheddar, salt, and pepper into a bowl and mix thoroughly. Form into 1-2 inch diameter balls and arrange in aluminum foil lined baking dish. Bake for 30-35 minutes. Remove meatballs from oven and place into sandwich buns. Top with remaining cheddar and broil for 2-3 minutes, until cheddar melts and buns are toasted. Top with sliced jalapenos.
