QUINOA PIZZA BITES

Hello! These quinoa bites. Tasty. And healthy. I loved them. Forewarning: if you’re a little less health-nut, check out pepperoni pizza puffs. They’re the classic variety of this healthy version. But, if you ARE looking for something that is a little more like a healthy pizza, keep scrolling. I also really, really like the very finely chopped onion in these. Is it just me or does onion taste better when you really finely mince it up?

Quinoa Pizza Bites from Rachel Schultz

QUINOA PIZZA BITES
Makes 12 pizza bites

1/2 cup quinoa, uncooked
2 eggs
1/4 onion, finely chopped
1 cup mozzarella, shredded
1 clove garlic, minced
2 tablespoons basil
2 tablespoons oregano
Pizza sauce for dipping

Preheat oven to 350 degrees. Bring quinoa and 1 cup water to a boil over medium-high heat. Cover and simmer for 15-20 minutes. Combine quinoa eggs, onion, mozzarella, garlic, basil, and oregano into a large bowl and stir.

Divide mix into a muffin pan.

Bake for 15-20 minutes and serve with dipping sauce.

    Oh dear. I am single, made these and must control myself from eating the whole batch. Delicious. If I rationalize it enough I can convince myself they will be delicious for breakfast and put the leftovers in the fridge right now. Thank you for sharing your wonderful recipes!

    Delicious! I only opted for 1 Tablespoon of oregano and 1 Tablespoon of basil. It was still a bit much. I think next time I will go for a teaspoon of each.
