Who is ready for St. Patrick’s Day? What does this holiday mean? Dave is not a big fan of this holiday, so we keep it pretty low key. I think we’d have to come up with some traditions to make it meaningful or have more of a purpose. Right now there’s not a lot to it, at least how it is culturally celebrated. David is a hummus lover, however, so I thought a festive version with two of his favorite flavors might be some festive-ness he would enjoy.
GINGER & CILANTRO HUMMUS
Serves 3-4
15 ounces chickpeas
1/2 cup tahini
1 tablespoon garlic
1 tablespoon ginger, grated
1/4 cup cilantro
1 lemon, juiced
1/4 cup water
1/4 cup olive oil
A dash of salt
Rinse and drain chickpeas. Pulse in a food processor until large chunks form. Add tahini, garlic, ginger, cilantro, salt, and lemon juice.
Process for an additional 1-2 minutes, streaming oil and water into mixture.
Top with cilantro and serve with pita chips.
