Okay, I have yet to make homemade gnocchi. But we are starting here. (I AM EXCITED AT THE CONCEPT OF HOMEMADE GNOCCHI!! When the time is right.) I’m now giving this version a try with storebosugh gnocchi. (Still fine, but I know it won’t compare to homemade. I just already know.) Also this has green beans aka french beans so I’m immediately interested. And a yummy pesto so here we go for a dinner. Lastly, I LOVE RICOTTA!
CREAMY PESTO GNOCCHI WITH PEPPERED GREEN BEANS
Serves 3-4
1 pound gnocchi
2 cups green beans, cut into 1/2-inch pieces
1/2 batch my favorite pesto
1/4 cup heavy cream
1/4 cup ricotta
Salt & pepper
Prepare gnocchi according to package instructions.
Meanwhile, bring a large pot of water to boil and cook green beans 3-4 minutes, or until slightly tender. Drain and season with pepper. In a large skillet, add gnocchi, pesto, and cream, stirring and cooking for 2-3 minutes. Top gnocchi with green beans and ricotta.
