I’m struck by the individuals in Boston who ran to help wounded rather than to safety. Would I react the same way? Praying for a heart of empathy for myself and for those hurting from the tragedy this week.

Filipino Pulled Pork & Mashed Sweet Potatoes from Rachel Schultz

FILIPINO PULLED PORK & MASHED SWEET POTATOES
Serves 3-4

1 pound pork loin
1/4 cup soy sauce
1/3 cup apple cider vinegar
1/2 cup water
5 cloves garlic, minced
5 bay leaves
1 jalapeño, chopped
4 sweet potatoes, peeled and cubed
1/2 cup orange juice
1 tablespoon brown sugar
1/2 teaspoon cinnamon
Brown rice
Salt & pepper

Place pork loin, soy sauce, vinegar, water, garlic, bay leaves, and jalapeño into basin of slow cooker. Cook on low for 3-4 hours, flipping pork loin half way through. Remove pork loin from slow cooker and shred with two forks. Season shreds with pepper and return to basin to cook for an additional hour.

Meanwhile, cook potatoes in a pot of boiling water for about 20 minutes, or until fork tender. Mash sweet potatoes and stir orange juice, brown sugar & cinnamon into mixture. Serve with brown rice.
