SLOW COOKER CHICKEN CAESAR SANDWICHES

It came to be that time for me – the moment in every young cook’s life when their knife skills get the best of them. (To be clear, I do not even have mad chef knife skills). I cut myself. Stitches happened. The husband and knight in shining armor came to the rescue as is typical of him. I trust you will all have less drama making these sandwiches! I love these because they are a crockpot thing that when brought together with just a few other ingredients, feels really fresh and not crockpot-ish.

A great meal to eat with some good potato chips or sliced up carrots. It’s fresh and I love the caesar dressed chicken with the creaminess of the avocado.

Lastly, to me, these easy homemade hamburger buns make all the difference!

SLOW COOKER CHICKEN CAESAR SANDWICHES
Serves eight

8 boneless, skinless chicken breasts
1 tablespoon olive oil
2 cups caesar dressing
1 cup parmesan, shredded
1/2 cup fresh parsley, chopped (1 tablespoon dried)
2 teaspoons pepper
8 hamburger buns
1 cup spring mix lettuce
2 avocados, sliced

Arrange chicken breasts in base of slow cooker. Drizzle with olive oil. Cook on high for 3-4 hours or low for 5-6 hours.

Remove chicken from slow cooker and shred. Return chicken to basin and stir in caesar dressing, parmesan, parsley, and pepper. Cook on low for 30 minutes.

Remove and serve on buns with spring mix and avocado slices.

    This just won tonight’s dinner lottery! I’m wondering if it would be odd to add a few veggies like green onions and celery? Just to beef up its veggie game a bit? I would add them in the last 30 minutes with the dressing. What do you think? Thanks for the recipe!

    Just made this. As easy as this is to make and with so few ingredients, this is an absolutely delicious sandwich! I can see this also being cold over romaine lettuce with no bun to cut carbs or hot over a bed of rice. But for now gonna enjoy it the way the recipe was written. Thanks for a great recipe!

    Delicious! I’ve used this recipe a few times now and I absolutely love it! I’ve made some changes and added my own little twist to it. I use more dressing and cheese than what’s called for. Also, I use one teaspoon of pepper and a blend of parmesan, romano, and asiago cheese. I highly recommend trying it with toasted ciabatta bread with garlic butter, it’s like a giant crouton! This last time around I happened to have some bacon on hand and added it, it was outstanding! Thank you very much for sharing this recipe, I know my family and I will enjoy it for many, many years to come!

  • So glad I found this on Pinterest! I searched for chicken and picnic and up this popped. I made it for a small outdoor party with friends and made it again the next day to enjoy as lunch all week! I love how simple but tasty it is and how the crock pot allowed me to throw it in while getting other things done around the house!     MSN linked to this recipe for what was supposed to be Beer, Cheese and Chicken on a pretzel roll so to my surprise when I did not see this staring back at me. Not that this does not look scrumptious, because it does, but I had my heart set on that pretzel roll of goodness. Now, I have taken the time to go thru your recipe categories; chicken, sandwiches and even slow cooker and did not find the recipe. Then I took to the search function and searched for both beer and pretzel, nada. I am just hoping that maybe it has not been posted on your site yet and that it will come soon. Other than that, I found many great recipes I cant wait to try at home.

    So… because I just got off work and was feeling lazy the way I did this was sprinkle some Italian seasoning and parsley on the breasts and cook them in the oven on 400. Then I shredded the breasts and eyeballed in the Caesar and parm and mixed it all up.

    Was super good though, so thanks for the inspiration! (Oh and I used baby spinach instead of romaine cuz that’s what I had.)

    Made this tonight and it was great!! I diced up two chipotle peppers and threw them in with the dressing. I’m from Texas so everything’s gotta have a kick. I highly recommend it.

    I made these this week and have to say they are awesome and so easy! They got high praise for my boyfriend too. I used LiteHouse Greek yogurt Caesar (love that stuff) to keep them lighter. This would be great to make in a bigger batch to please a crowd. I’m sure even picky kids would love them.

    Just wondering why you slow cook chicken breast for 3-4 hours in a crock pot? Simply putting them in a saucepan with 2-3 cups of chicken stock and simmering on medium for 20 minutes would give you a tender breast that’s moist and flavorful. You are simply poaching in the same way, but utilizing water and cooking for 3-4 hours assures a flavorless and tougher breast. The additional 30 minutes cooking after mixing can be done in the same saucepan on medium/low.

    So in my view better, more flavorful, results can be obtained in less than a third of the time and electricity use by poaching for 20 min, cooling, shredding, mixing and reheating all in a simple saucepan.

      The reason we are reading a recipe that requires cooking the recipe in a crockpot is because THESE ARE CROCKPOT RECIPE IDEAS! lol There are obviously many ways to cook chicken but this page is dedicated to crockpot ideas. :-)

  • This is cooking in my crock pot right now and I think the results are going to be awesome. One suggestion, however: when you drain the water e chicken’s been cooking in, why not save it and freeze it or something? It is chicken broth, after all! I just love having real homemade chicken broth sitting around when a recipe calls for it.

    YEAH these were awesome! I had a few hours notice that a large contingent of my family would be coming to my house for lunch, and I frantically paged through my pinterest page to figure something out – and this popped up. I grabbed a big thing of chicken thighs and threw them in my dutch oven for 2 hours at 300, they were a total hit and easy and inexpensive. LIFE SAVER!

    Just finished eating this for dinner and it was very tasty. I had it in the crock pot waiting for me to get dinner ready after soccer practice.     If it makes you feel any better, I was slicing a banana two days ago sliced my thumb. Yes stitches here too (but this wasn’t my first rodeo) and a tetanus shot that has my arm swollen and sore also. So you have a new resident in Sore City. LOL. The sandwhich looks devine.

    I had to have stitches in my lip once, worse than having a baby! (I’ve done that too.) You know what else hurts? When you stub your toe so hard the blood builds up underneath so they have to burn a hole in your nail to relieve the pressure. Yeah, good times! Either way, I will be trying this recipe!     Sorry you cut yourself! That’s never fun. When I was a teenager I stepped on a sewing needle at home and it went through my second toe. It hit the bone and split the needle and ended up coming out the side of my toe. :-/ My mom walked in the door to me lying on the ground in tears. I got 10 of those lovely little shots in between all of my toes. Ouch!

    This looks good and I think I’ll try it this week. I like to shred my chicken in the stand mixer because shredding chicken with forks should be illegal. ;)

  • I did use the crockpot at the end. .I grilled my chicken then shredded it into the crockpot added the ingredients and used the slow cooker for 30 minutes. It was amazing!

    This tasted REALLY good, but the fat content was way too high! I just ate this and realized (with my brand of caesar dressing), that 2 TBS of the dressing has about 21 grams of fat. I know we need fat in our diet, but I’m pretty sure I had a lot more than 2 TBS. I feel kinda gross now, but if you’re not worried about the fat, this tasted fantastic!

    Thank you for sharing this recipe! I made this for dinner and it was soooo good! I didn’t have time to cook it in the slow cooker so I cooked it on the stove and it was still good. I added sliced tomatoes on the sandwich. This is definitely a keeper!

    When you remove the chicken to shred it and then return it to the crock to add the remaining ingredients, do you drain the water that the chicken was originally cooking in or do you add the ingredients to the water/broth?

    Several July 4ths ago, I got a fishing hook stuck in my middle finger, right next to my nail, but not through to the pad on the front. We were still on the boat outside of Key Largo and were bouncingly coming in. My husband cut off the lure and the other barbs of the treble hook, but I just couldn’t push it through to the front to get it over with. So off the ER on the fourth. And I can really sympathize with the shots. Right in the joints around finger. And more since it didn’t quite do it. And the tetanus shot. Good times! You have my sympathies.

    Oh no! So sorry to hear this, hope you have a speedy recovery. I’ve recently had the same experience with my 18 yr old daughter. She called me at work last Saturday, “Mom! I’m bleeding all over I cut my hand while slicing a bagel, help me!”. And, like you, we were off for the nearest emergency center post haste. Several stitches later we left with a care kit and instructions for keeping infection from rearing up in the wound. I’ve had stitches a few times over the years, is never pleasant no matter how many times you go through it. Best to you.
