Bubbly Cheese Garlic Bread from Rachel Schultz

Sometimes I get a bit crotchety and complain to David when people make Facebook statuses or tweets about the weather. I can be seen behind my laptop sighing and muttering “who cares…”

Yikes. Okay, so small talk about weather wears on my nerve, but that needs to not make me get cynical toward all of mankind.

And here I go now to talk about the weather.

In the mitten where I live, (Michigan!) March can really go back in forth. One day I didn’t wear a coat and the next there’s a snowstorm out of my window.

It doesn’t bother me, I remember a time just a few months ago I was excited for snow. So now that we have it, I choose to appreciate it. Maybe that makes me a little sugar-coated-sunshine-and-rainbows, but I do like all the seasons. My favorite season is whatever one it’s been the longest since I’ve experienced, though. Summer, I miss you!

BUBBLY GARLIC CHEESE BREAD
Serves 16

1/2 cup butter, softened
2 cloves garlic, minced
1/2 cup italian salad dressing
1 loaf Italian bread
2 cups mozzarella, shredded
2 teaspoons parsley

Preheat oven to 375 degrees. Blend butter, garlic and salad dressing together with a hand mixer.

Slice loaf in half length-wise and slice each half into 8 pieces.

Arrange bread on a lined baking sheet. Spread butter mixture over slices. Sprinkle with mozzarella and parsley.

Bake for 15-20 minutes, or until golden.
