Super Fast Kale & Sausage Soup

I would like to now share about three of the most awkward minutes of my life. I am jogging through our neighborhood. (Lots of weird things have been happening during my runs lately. Does this mean I should stop exercising? Yes? Good.) I am coming around the corner of our street. This is the last 1/2 mile or so of my run. My house is in sight. It feels all down hill from here.

The whirring of a Rascal scooter reaches my ears as a man turns off a perpendicular street on to my road. I don’t mean any disrespect, but this man looked rough around the edges. And fully aware of my young-woman-by-herself-ness, I kind of clenched up and tried to mind my own business. I’m almost home.

This is when I learned the unfortunate reality that the speed of which a Rascal scooter operates is identical to the pace I am capable of running. And of course, this is my fate that this gentlemen turned on to my road at the same time I passed his road.  For approximately three full minutes we were running and Rascaling in perfect sync. Right next to each other. And he may or may not have just stared at me the whole time.

I’m sure he was a really nice man! (Actually I’m not sure.) But in case he wasn’t, I refused to make eye contact as to not engage in anyway, should he have been the criminal type. This three minutes lasted an eternity. And then he turned off. So he was probably a normal, friendly, Mr. Rogers-type. And I guess that makes me rude. I don’t think I’ve ever wished I could run just .5 mph faster so bad.

The theme of this introduction? Speed. The theme of the hearty, warm soup. Super fast!

SUPER FAST KALE & SAUSAGE SOUP from Rachel SchultzSUPER FAST KALE & SAUSAGE SOUP
Serves 3-4

1 pound pork sausage
2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled and diced
2 cups kale, sliced
2 cloves garlic, minced
1 teaspoon oregano
1 teaspoon basil
1 teaspoon parsley
1/2 teaspoon salt
1 teaspoon pepper
4 cups vegetable broth
15 ounces white beans
1 tablespoon lemon juice

In the base of a large stockpot, drizzle sausage with olive oil and brown over medium heat. Add onion and carrots to pot and cook for 5-7 minutes, stirring occasionally. Add kale to pot and cook for 1 minute. Add garlic, oregano, basil, parsley, salt, pepper, vegetable broth, white beans, and lemon juice to pot. Cover and simmer on low heat for 25 minutes.

    This post made me lol! I’ve had to pass someone on the sidewalk/track before who’s also jogging and I always worried I wouldn’t be fast enough and that I’ll just end up jogging along next to them. But I feel like the scooter guy was just creepin’! haha
    And of course the soup looks awesome!

        I made this last night for dinner and it was absolutely YUMMY!!!! So glad I made a big pot of it….hubby and kids loved it. I will definitely be making this again…I might add some pasta to it next time. Thank yo Rachel!
