ROOT BEER PORK TACO SALADS

I have a legend to share with you.

Well, if “legend” indicates that it is possibly not true, this is not a legend. Because it happened.

The story is about my Grandpa. He’s since passed, but this is a fun tale to remember of him. One day with his friends at McDonald’s, he said he was so hungry he could eat 10 Big Macs. Of course, his friends doubted this, but he assured them he really could. They agreed that they would buy all 10, and if he failed to finish, he would have to pay them back. But, if he was successful, well, he just got 10 free Big Macs.

Well you know what? He did it. Crazy! Insane! You can calculate how many buns plus patties that is yourself.

Fast forward a little while later, and word got around of his accomplishment. Some other friends not present on the first occasion were doubting if he’d really done it. In his perfectly humble way, he said to buy 10 more and he’d do it again.

And so, he’s eaten 10 Big Macs. Twice.

Root Beer Pork Taco Salads from Rachel Schultz

ROOT BEER PORK TACO SALADS
Serves 5-6

2 pounds pork loin
2 cups root beer
1 cup tomato sauce
3 cloves garlic, minced
2 heads lettuce, chopped
2 cups cheddar cheese, shredded
15 ounces black beans
1 red onion, chopped
Tortilla chips
Salt & pepper

Place pork loin in slow cooker with 1 cup water. Cook on low for 3-4 hours. Remove pork loin from pot and discard water. Shred pork with two forks and return to crock pot. Season with salt & pepper. Add root beer, tomato sauce, and garlic and stir.

Cook on low for 1 hour. Remove pork shreds and assemble taco salad with tortilla chips, lettuce, cheddar, beans, and red onion.
