Noodle-Free Pad Thai? If I wasn’t the one making this I would be skeptical because carbs are totally fantastic. But get this: I didn’t even notice the noodles were gone. It was flavor explosion over here, then cool texture over there; I had no time to think about pasta-what’s-his-name. Plus, this is great for summer when everybody is cool with having one less pot of water to boil. PS: If you ARE looking for a classic pad thai, better-than-takeout easy pad thai is right up your alley.
NOODLE-FREE PAD THAI
Serves 2
5 carrots, peeled in ribbons
1 zucchini, peeled in ribbons
2 chicken breasts, cooked and cubed
3 scallions, sliced
1 egg, scrambled
1 batch of this awesome pad thai sauce
Cilantro
Peanuts
Arrange zucchini and carrot ribbons on a plate like noodles.
Top with chicken, scrambled egg, peanuts, and pad thai sauce. Garnish with cilantro & lime wedges.
