MANGO SALAD

More than once I’ve said, “Dave’s my rock; I’m his entertainment.” He keeps me from self destructing more often than not.

A group of friends was arranging who would bring what for a cookout through e-mail. To give you an idea, people’s reply alls were things like: “drinks,” “a side,” or “a dessert.”

At first, I wasn’t sure what to bring since most things were covered, and then I settled on an appetizer. (Actually it was this whipped feta crostini). In my reply, however I wanted to be specific about what I was making so other people  might know exactly what else to bring to compliment everything else in the meal.

About ready to hit send, I paused and called to David in the other room, “Is it pretentious to respond in this email chain that I’ll be bringing a tomato crostini with whipped feta?”

“Absolutely.”

“Ok, thanks.” Highlights and deletes text. Writes “an appetizer.” Hits send.

Mango Salad from Rachel Schultz

MANGO SALAD
Serves 3-4

3 boneless, skinless chicken breasts, cooked and shredded
3 mangoes, peeled and sliced
3 shallots, chopped
2 tablespoons chives
2 tablespoons olive oil
2 teaspoons honey
1 lime
Salt & pepper

In a small saucepan, cook shallots until tender. Season with salt & pepper. Combine shallots with shredded chicken, and mangoes in a large bowl.

Whisk together chives, olive oil, honey and lime juice.

Drizzle dressing over salad. Serve chilled.

    Rachel sorry to jump in here but I need your help. I was looking at one of your recipes that had chicken, white rice, wild rice and cheese. As I am about to hit print….poof …. you sailed off into cyber space and I can’t find it. Can you help…please….       Sure! Actually I use that recipe a lot for sympathy meals too. It’s called cheesy chicken and wild rice casserole. You can find it by searching in the search bar.

    The crostini look fabulous…a wonderful dish to bring to a party…but I also love this mango salad you prepared.
