EASY SKILLET CHILI

If you like your chilis the heartiest of hearty, this one is for you. Plus, it gets pulled together in a skillet which feels so much easier. One pot meals, I love you. We topped it with diced jalapeños, or if you prefer less spicy, try green onions. And we love it served over corn bread! Another one pot chili option you may like is this one pot quinoa turkey chili. Also here is a classic sweet cornbread and a sun dried tomato basil cornbread recipe.

EASY SKILLET CHILI

EASY SKILLET CHILI
Serves 4

1 pound ground beef
1 onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
15 ounces kidney beans
1 cup tomato juice
1/2 cup water
4 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 cup rice
15 ounces corn
1 cup cheddar, shredded
3 green onions, sliced
1 jalapeño, minced

In a large skillet, brown beef with onion, pepper, and garlic over medium heat. Strain liquid from pan. Add kidney beans, tomato juice, water, chili powder, oregano, salt, and rice to skillet. Cover and reduce heat to medium-low for 25 minutes. Add corn to skillet and top with cheese and cook for five more minutes, until cheese is melted. Top with green onions and jalapeño.
