BAKLAVA NO-BAKE BITES

When Pinterest got big in Autumn of 2011, it was awesome for everyone – not to mention crazy useful for planning our wedding. I love Pinterest! Still do! (Here’s my account). Everyone loves it, unless you’re some kind of scrooge. I remember telling David with such gusto, “who would ever read a magazine now that Pinterest exists? It’s like everything good about a magazine times a million and without ads.”

Then this past fourth of july, my mother in law had some HGTV magazines laying around the cottage. I picked them up, as I purposely left my laptop at home and my phone had no service. Flipping through it, you guys… I was simply delighted. The articles, the pages – everything Pinterest doesn’t have. David’s mom bought me a year-long subscription and it’s been so nice. (File that away as a great gift idea for someone! It’s like you give 12 gifts instead of just one.)

This isn’t paid by HGTV or whatever. I just wanted to take a moment to give props to the growingly lost, but still wonderful experience of homemaking mags. Without that industry, I don’t think my blog would exist today in the same way.

And, I like the diversification too. Like that you can read this baklava no-bake bites recipe online for free.

Baklava No Bake Energy Bites from Rachel Schultz

BAKLAVA NO-BAKE BITES
Serves 20 bites

1 cup walnuts
1 cup pistachios
1 tablespoon cinnamon
2 tablespoons butter, melted
1/4 cup honey
1 cup peanut butter
1 teaspoon vanilla
Dash of salt

Pulse walnuts, pistachios, and cinnamon in a food processor until large granules form.

Stir together butter, honey, peanut butter, vanilla, and a dash of salt in a large bowl. Combine mixture with nuts and shape into 1-2 inch balls. Chill in fridge for 20 minutes.
