ORANGE BALSAMIC SLOW COOKER ROAST

So, in this recipe I have listed it that you can put the meat and potatoes together all at once in the basin and cook them at the same time. That is good for when you want the slow cooker to be simplified to its fullest in its slow cooker glory. NOW, I will say even thought you can cook the carrots and potatoes right in with the roast, I have sometimes separated them out for a different texture. Meaning the meat still is cooked in the slow cooker and then I roast the carrots and potatoes. When time allows.

ORANGE BALSAMIC SLOW COOKER ROAST
Serves 3-4

2 pounds chuck shoulder roast
2 cups beef broth
1/2 cup brown sugar
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 tablespoon worcestershire sauce
1 teaspoon red pepper flake
3 cloves garlic, minced
1 orange, zested
3 pounds red potatoes
Salt & pepper

Place potatoes into base of slow cooker. Lay meat on top. Whisk together remaining ingredients and pour over meat and potatoes.

Cook on low for 6-8 hours.

    Could I do this with a pork tenderloin?

  • 3 quick questions.

    So you’re only using the zest of the orange?
    Also when I told my husband I was making pot roast for the first time, he suggested I make sure it had carrots. (His memory of pit roast includes carrots) thoughts on that? I didn’t want to need up your recipe so I was thinking maybe roasted and served on the side.
    Lastly in a similar situation, my mother suggested I add a bay leaf or two.

    Thoughts?

      Thanks Danielle! Carrots and bay leaf would be fine additions. I used only the orange zest, but throwing some juice in would be great too!
