QUICK BAKED POTATOES

I heard a comedian with a line about baked potatoes that is particularly applicable – “It takes forever to cook a baked potato in a conventional oven. Sometimes I just throw one in there, even if I don’t want one. ‘Cause by the time it’s done, who knows?” I agree! And baked potatoes are so great I need to be able to making them more efficiently. This is it. These are the flakiest, crispiest, tastiest (and fastest!) baked potatoes I’ve eaten.

QUICK BAKED POTATOES from Rachel Schultz

QUICK BAKED POTATOES
Serves 2-3

4 russet potatoes
3 tablespoon olive oil
Salt

Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Drizzle with olive oil and season with salt. Slice potatoes in half length-wise. Arrange on baking sheet, flat-side down. Coat with olive oil and season with additional salt. Bake for 30-40 minutes.

    I got a sheet that also has a rack. When I tried a similar baking method, the potatoes on the rack were not cooked to the desired level.

    I had the thought of placing an original sheet on the bottom rack of my electric oven with potatoes cut-side down, while the new sheet is placed on the top rack of the electric oven, having the potatoes placed cut-side up.

    Do you foresee there being problems about potatoes be placed on the rack cut-side up?

    These are the BEST potatoes ever. Easy with a sophisticated taste. Added Herb de Provence to the oil and sprinkled some on the potato skins after brushing them with olive oil. Fantastic.

    We eat predominately paleo and I tried this recipe with sweet potatoes and coconut oil. SO GOOD! This is now my favorite way to cook any kind of potato.
