PERFECT BLUEBERRY MUFFINS

My most favorite-est of all the muffins is, of course, blueberry. I loved eating them as a kid and as an adult they haven’t lost one bit of their charm and delight. I must emphasize going with fresh blueberries. The slight cash savings of buying canned ones is tempting, but resist, my friend! It will be worth it.

And the fake blueberry-candy type things some muffins have ARE NOT worth your time! If you are longing for summer berry prices, frozen “fresh” blueberries work well.

Serves 12 muffins

2 cups flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup vegetable oil
4 tablespoons butter, melted
1/2 teaspoon vanilla extract
2 eggs
3/4 cup milk
1 and 1/2 cups blueberries
Raw turbinado sugar for topping (optional)

Preheat oven to 350 degrees. In a stand mixer, stir together flour, sugar, baking powder, and salt. Add vegetable oil, butter, vanilla extract, eggs, and milk and stir until combined. Fold blueberries into batter. Divide batter into a lined muffin tin and top with raw turbinado sugar (optional). Bake for 25-30 minutes.
