COCONUT POLENTA

If you’re a fan of coconut, this is worth a try. You can dress it up with some shredded coconut (or berries), like I did here, or, dress it down with salt, pepper, and butter for a savory snack. This creamy dish is similar to grits or cream of wheat, but with an added punch of coconut.

COCONUT POLENTA
Serves 2-3

14 ounces coconut milk
3/4 cup quick-cooking polenta
2 cups milk

Heat coconut milk in medium sauce pan over high heat for 5 minutes to a boil. Add milk to sauce pan and return to boil. Stir in polenta and simmer for 6 minutes uncovered. Top with shredded coconut (and berries!).
