QUINOA FRUIT SALAD WITH HONEY LIME DRESSING

The temperature has been consistently 50+, which means I am ready to usher in summer food. Sorry soups and baked goods. I’ll be seeing less of you.

I’ve been trying to buy with the seasons more. In the US, we know no seasons because almost every fruit and vegetable is available almost the entire year. Available is different than desirable, however. I love sweet, ripe strawberries so much that sometimes in the snowy months I get desperate and buy some. Once I see their solid white centers, I regret trying to make it work.

But spring! Better produce! Fruit salad! PS: Here is my secret for a super yummy fruit salad.

QUINOA FRUIT SALAD WITH HONEY LIME DRESSING
Serves 6

1 cup quinoa
2 cups water
1 lime, juiced
3 tablespoons honey
1 and 1/2 cups blueberries
1 and 1/2 cups strawberries, sliced
1 and 1/2 cups mango, cubed

Prepare quinoa according to package instructions. Set aside. Whisk together lime juice and honey. Stir together fruit and quinoa. Toss with dressing.

Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 lime, juiced
  • 3 tablespoons honey
  • 1 and ½ cups blueberries
  • 1 and ½ cups strawberries, sliced

Instructions
  1. Prepare quinoa according to package instructions. Set aside.
  2. Whisk together lime juice and honey.
  3. Stir together fruit and quinoa. Toss with dressing.
