The temperature has been consistently 50+, which means I am ready to welcome in summer food. Sorry soups and baked goods. I’ll be seeing less of you. I’ve been trying to buy with the seasons more. I know we kind of know no seasons because almost every fruit and vegetable is available almost the entire year. Available is different than desirable, however. I love sweet, ripe strawberries so much that sometimes in the snowy months I get desperate and buy some. Once I see their solid white centers, I regret trying to make it work.
But spring! Better produce! Fruit salad! PS: Here is my secret for a super yummy fruit salad.
QUINOA FRUIT SALAD WITH HONEY LIME DRESSING
Serves 6
1 cup quinoa
2 cups water
1 lime, juiced
3 tablespoons honey
1 and 1/2 cups blueberries
1 and 1/2 cups strawberries, sliced
1 and 1/2 cups mango, cubed
Prepare quinoa according to package instructions. Set aside. Whisk together lime juice and honey. Stir together fruit and quinoa. Toss with dressing.
