WARM POTATO SALAD

I do not like mayo. And I my willingness to get down with mustard is pretty restricted. As you can imagine, this had effectively ruled potato salad out for me. This warm version is olive oil based keeps things much lighter.

WARM POTATO SALAD from Rachel Schultz

WARM POTATO SALAD
Serves 5-6

1 yellow onion, diced
1 lemon, zested
2 tablespoons olive oil
2 pound potatoes
Parsley, chopped
Olive oil
Salt & pepper

Preheat oven to 425 degrees. Arrange potatoes on a parchment lined baking sheet. Coat with olive oil and season with salt and pepper. Roast for 25 minutes.

Meanwhile, stir together diced onion, lemon zest, and 2 tablespoons of olive oil. Remove potatoes from oven and stir in onion mixture. Roast for 10 more minutes. Top with parsley and additional salt & pepper.

    So glad I’m not the only one in the world that isn’t a fan of potato salad! It’s the mayo that gets me too. This one looks yummy though!
