SMOKED SAUSAGE & SPINACH PASTA

Are you afraid of sausage? I kind of am. Any food that has a phrase coined about how gross “seeing the sausage made” is throws up a red flag for me on eating it. (OF COURSE??) I had a hunch, however, that David would love it (since boys seem to like foods like that anyway). We use turkey sausage all the time, but because I was going for the real deal, I made a deliberate trip to our speciality food store to at least get a really nice version. Avoiding any additional mysteriousness of sausage was the goal.

And I really liked the final product! And (no surprise) the man of the house did too.

SMOKED SAUSAGE & SPINACH PASTA from Rachel Schultz

SMOKED SAUSAGE & SPINACH PASTA
Serves 3-4

14 ounces smoked sausage, sliced
2 tablespoons olive oil
1/2 pound pasta
15 ounces white beans
1/2 pint cherry tomatoes, halved
2 cups spinach
1/4 cup pine nuts
2 carrots, sliced
Parmesan
Salt & pepper

Heat sausage in a skillet over medium heat for about 5 minutes. Meanwhile, prepare pasta according to package instructions. Add carrots and olive oil to skillet and continue to cook for about 5 minutes on low. Add white beans, tomatoes, and spinach. Stir and cook until spinach is wilted.

Add in cooked and strained pasta. Season with salt & pepper. Top with pine nuts and parmesan.

    I just found your blog today (via Pinterest) and already love it. Why? Because the recipes look delicious and it’s easy to read! Too often recipe blog introductions are loooonnngggg and you have to scroll past a zillion paragraphs and pictures to find the recipe! This is not easy on an iPhone! I appreciate the appropriate simplicity.
