PEANUT BUTTER SWIRL GLUTEN FREE BROWNIES

Around Christmas time, I love these gluten free peppermint brownies. So much so, I needed a recipe unrestricted to only a couple months a year. This peanut butter batch is just the one!

PEANUT BUTTER SWIRL GLUTEN FREE BROWNIES 
Serves 9 brownies

15 ounces black beans
2 eggs
3 tablespoons vegetable oil
3/4 cup cocoa powder
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup sugar
1 and 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup peanut butter
2 tablespoons powdered sugar
1/3 cup chocolate chips

Preheat oven to 350 degrees. Pulse black beans, eggs, vanilla, and vegetable oil in a food processor until smooth.

In a stand mixer, combine cocoa powder, salt, sugar, baking powder, and baking soda. Slowly add wet ingredients to dry. Fold chocolate chips into batter. Pour batter into a greased 8×8 baking dish. Stir together peanut butter and powdered sugar. Drop pieces of peanut butter over brownies. Use a butter knife to swirl peanut butter into batter. Bake for 35-45 minutes.
