BAKED CHICKEN PARMESAN

As recently shared, frozen meals are my trusty sidekick of late. I’m not using them as frozen now, but making double of everything for frozen meals when a tiny bundle of joy and hard work arrives. My update is that I’m still loving the usefulness of this method. This baked chicken parm is just another perfect example. And I’m sure my thankfulness will only wash over me again as I’m laying in bed letting David know a dinner is already made that he can pull out of the freezer whenever he pleases. Thank you modern freezer preservation methods. What did the pioneers do without them? (Well, I actually often wonder what the pioneers did without a lot of things, freezers being just one.)

BAKED CHICKEN PARMESAN
Serves 5-6

3 chicken breasts, cooked and cubed
1 pound pasta, cooked al dente
2 cups tomato pasta sauce
2 cups mozzarella, shredded
1/2 cup parmesan, shredded
2 cups panko
2 tablespoons olive oil
2 tablespoons oregano
2 tablespoons basil
Salt & pepper

Preheat oven to 350 degrees. Arrange pasta and chicken into base of a 9×13 baking dish. Drizzle olive oil over pasta. Pour tomato sauce over pasta. Season with oregano, basil, salt & pepper. Top with mozzarella, panko, and parmesan. Bake covered with aluminum foil for 25 minutes and uncovered for a final 5 minutes.
