BLUEBERRY PIE BITES

August 25, 2014

Making a pie crust from scratch is sometimes very finicky, and sometimes very easy, depending on the recipe. I have found recipes that I work well with, but previously before I had a few favorite pie crust recipe I was slow to plan one. Also they take a bit of time. What if I need a pie now? And I do. These blueberry pie bites take seconds to put together and can cure any pie sweet tooth. I have made them using store-bought pie crust so, that’s something to consider.

But you would not have to! As for homemade, I like the crust in this recipe a lot. And Ina has a good one too in her Parties! cookbook. (I think that is her best cookbook, by the way.)

  • Hi Rachel! I loved making the Blueberry Bits, yum!! I had trouble keeping the pastry pinched together though…even tried the egg wash to help, but they fell flat like a disc. Any advice? (they were still terribly yummy!)
